Well, besides what Jack has said to Rex, there's also his actions: he checks out, flirts with, chases, and even sleeps with men, but ignores women. Even if he wanted to go that far to screw with Rex, the Jack we know would have had a very hard time doing so. But there could be an explanation to that. It's implied that Jack thinks he's in love with Gwen. That might stop him from chasing other women, but not other men. (And presumably not aliens of other genders, but we haven't seen any.) Many bisexual people think that way—definitely not all of them, probably not even the majority, but enough that it's an established pattern (so, for example, couples involving one or two bisexual people often discuss it to make sure the two partners have the same expectations about fidelity).

one thing i've noticed on the new season of torchwood is that they always seem to be portraying jack as gay, although he's omnisexual. will there suddenly be a scene where jack flirts with a girl folowed by rex saying "i thought you were gay" and jack replying "you people and your silly little categories" or will jack recount another experience he's had with an alien? just something i noticed.
