Throughout the series, the cracks have been shown to remove people, but '''not''' perform massive rewrites to time. When people are removed, the major "rewrite" happens to ''memories''. This is why artefacts of the people removed remain: (a) unknown faces in pictures, (b) wedding rings, (c and d) clerics removed but no substitutes appear, so there weren't enough to keep the Angels at bay but still the Angels didn't overwhelm the group in the "past", (e) peoples whose parents are removed still exist. (After young Amelia was eventually removed, even older Amy remained: because she was a distinct person and would have to be removed separately.) | |||

(Yes the Doctor was talking about people, but still the same applies to the stars.) This is why the "star cults" existed. People didn't remember stars, but there was overwhelming evidence that they ''did'' exist. So much so that a 'non-believer' like Dawkins was a 'believer in stars'.
