The sonic probe was a device used by the future Amy Pond. It had the ability to re-wire the Handbots. The Doctor took control of it to help bring the two Amy's together. When he did, Amy admitted it was a sonic screwdriver. (DW: The Girl Who Waited)
Dalek Sec called the Tenth Doctor's sonic screwdriver a sonic probe. (DW: Doomsday) Presumably, 'Sonic probe' is a catchall term for sonic devices such as the Doctor's screwdriver
