A Chinaman could be, literally, a "man from China". (DW: The Talons of Weng-Chiang) However, the word had an entirely different meaning in the sport of cricket. In that context it was, as the Fifth Doctor once explained to Turlough, an "off break ball bowled by a left-hand at a right-handed batsman". (BFA: Phantasmagoria)
