A Chinaman could be, literally, a "man from China". (TV: The Talons of Weng-Chiang) However, the word had an entirely different meaning in the sport of cricket. In that context it was, as the Fifth Doctor once explained to Turlough, an "off break ball bowled by a left-hand at a right-handed batsman". (AUDIO: Phantasmagoria) At some point before his fifth incarnation, he "used to bowl a very good Chinaman" and once took five wickets for New South Wales. (TV: Four to Doomsday)
