Cyber-hand was a term used by the Eleventh Doctor to describe the hand parts of the Cyberman, attached to the Cyber-arm of its Cyber-body. (PROSE: Plague of the Cybermen)
Weapons-grade Cybermen were capable of detaching parts of their Cyber-body including their hands. On Hedgewick's World of Wonders, one Cyberman used this ability to kill Missy. (TV: Nightmare in Silver)
